3. Drying

Now the concentrated Whey protein will undergo a drying process like spray drying. This will convert the liquid concentrate into a fine powder making it easier to store, transport and consume.

  • Ion exchange chromatography
  • This technique isolates specific protein fractions from the whey resulting in whey protein isolates with higher content of protein and lower content of lactose.

  • Hydrolysis 
  • This process breakdown the whey protein into smaller peptides which led to improvement in the digestibility and absorption.

    2. Whey protein isolate 

    This undergoes the processing to remove lactose and fat content which results in a higher protein content and a faster absorption rate. However the whey protein isolate can be more expensive than the whey protein concentrate.

    3. Whey protein hydrolysate 

    This type is predigested into smaller peptides which lead to increase in absorption and reduce the risk of digestive discomfort. However this is one of the most expensive options and has a slightly bitter taste.
